Recently I learnt to cover cakes using fondant icing. I made a fruit cake to take along to the course and over two nights went through filling holes and levelling the cake, covering in marzipan, covering with fondant and a few different tips and tricks for decorating.

The photo is terrible, but I’m quite proud of how well I did on my first go.
Now the trouble starts. This weekend I’m doing it all on my own, no help from teacher this time. I can’t give away any details of what it will look like just yet as it’s a surprise for the birthday girl, however I’ll be making a white chocolate mud cake and using ganache on the cake instead of marzipan. Wish me luck!
